If you like chicken salad, you’ll devour this one!
I’ve been busy experimenting with my new smoky spice range which will be available from mid-September. I’m trying to come up with both difficult and simple recipes and this one has to be one of the easiest.
I’ve always loved chicken salad and the addition of smoky Curry Guy garam masala and spiced salt has really added depth to this simple dish. You could also use homemade garam masala. My recipe is here. I also have a garam masala video if you’d prefer to watch it being made..
The warming spices from the garam masala make the chicken salad a dish to remember.
You might like to serve this chicken salad on it’s own with salad greens. It also makes a nice sandwich that is perfect for lunch or a quick snack.
3 cooked chicken breasts cut into one inch chunks
1 fresh green chilli – finely chopped
1 red onion – finely chopped
2 Spring onions thinly sliced
1 small bunch coriander – finely chopped
3 tablespoons lime juice
2 tablespoons mayonnaise
Splash of tabasco
1 tablespoon garam masala or The Curry Guy smoked garam masala
Salt and freshly ground pepper to taste (I use The Curry Guy spiced salt)
125ml (1/2 cup) olive oil

Combine the chicken, green chilli, red onions, Spring onions and coriander in a bowl.
In another bowl, stir together the lime juice, mayonnaise, Tabasco, garam masala and salt and pepper.
Slowly drizzle in olive oil while constantly stirring with fork.

Serve as a salad with fresh lettuce or as a sandwich as I have done here.
