Spinach & Apple Lassi

My spinach smoothie recipe is delicious with the extra bonus of being super healthy. I even include turmeric in the spinach smoothie recipe for the extra health kick.

I’m not even going to try to tell you that this is one of my all time favorites.  My spinach smoothie is, however extremely healthy and is always my go-to breakfast when I feel like I have been over-indulging a bit.

It is actually quite filling as I add walnuts for the extra bit of protein and it really will easily keep you going until lunchtime.

I actually name this smoothie a lassi as technically it is an indian lassi. Lassis are generally made with yoghurt and no milk at all so this spinach smoothie recipe ticks all the boxes of an Indian lassi drank frequently for breakfast in India.

Make the recipe your own

I use walnuts for my spinach smoothie recipe  but you could also use pistachios. Add some to the blender with the other ingredients and sprinkle some finely chopped nuts on top to make the lassi look nice.

I have made the spinach smoothie both with a Nutibullet that I have had for years and also with my more recently acquired Vitamix A3500i. Both work well to produce a smooth lassi but as you can see the Vitamix A3500i does produce a more smooth consistency as is a more powerful blender for fruit smoothies and lassis.

Ingredients

  • 2 handfuls of baby spinach leaves
  • 250ml ( 1 cup ) low fat Grrek yogurt
  • 1/2 teaspoon turmeric
  • 2 apples very roughly chopped
  • Large Handful of Ice Cubes
  • Good handful walnuts and a few finely chopped for the top

Instructions

  1. Place all of the ingredients in a blender.
  2. Blend until smooth.
  3. Serve.
