The new I.O.Shen Maoui Deba Knife is now my go to knife for pretty much everything I prepare in the kitchen. I’ve been a big fan of I.O.Shen Knives since 2012 and have acquired quite a collection. Believe me, I’ve tried a lot of knives but I.O.Shen just plain gets it.

There’s something about the new Maoui Deba knife, however that has got me reaching for it again and again.

Chef designer Karim Maoui (@KMaoui) designed it to be a multi-purpose knife that could be used for many different tasks.  I can assure you he has succeeded with this one. The Maoui Deba is 170mm in lenth and has a depth of 57mm at its widest point. As you can see from the photos, it has a beautiful curve that leads to the point. As with all I.O.Shen products the blade is razor sharp. I cut through a whole swede with ease using the Maoui Deba to make this lamb curry with swede recipe.  It was very tasty by the way. 🙂

Although I love using different knives for different things, I am a firm believer that if you only have enough budget for one knife, you need to get yourself a good all-rounder. You need a knife that you can reach for to carry out most of your food preparation requirements. Those complete knife sets that retail for between £80 and £100 may look great but they will never be as satisfying to use a a good all-purpose kitchen knife like those produced by I.O.Shen.

When I first met I.O.Shen Director Natalie McVeigh (@ioshenknives) at the BBC Good Food Show back in 2012, I purchased their 3 piece starter set which included a pointed paring knife, the Sahm Khom Slicer and a 21cm chef’s knife. I found myself using the Sahm Khom slicer for just about everything. From vegetables to meat, it was the knife I wanted in my hand.

Don’t get me wrong here… I’m not moving on and I won’t be giving that knife to any of my kids to take with them to college! I just want to show that having one knife you really like to use can keep you very happy in the kitchen.

Now I am really enjoying the new addition to I.O.Shen’s fantastic range and I think you will too.

Put simply, the Maoui Deba Knife feels like an extension of my hand. I’ve also let my brother-in-law chef, my local butcher and my curious wife try it out so that she could see what all the fuss was about. They all say the same.  It is the perfect weight and cuts, slices and dices everything to perfection. From slicing fish fillets to cutting through the hardest root vegetables, it is everything I have always wanted in a knife and I’d be surprised if you don’t feel the same.

Hi Dan,

Thanks for sharing nice review post. THE NEW I.O.SHEN MAOUI DEBA KNIFE is much more than I expected. This one is on a par with my Strider knives or Chris reeves knives, but at a fraction of the cost. Solid lockup, no wobble in the blade, and can be adjusted with e torx driver.

The action is very smooth - you can see the phosphor bronze washers. Handles well, great ergonomics. And the Walker liner lock is perfect, as usual. I recommend this one highly.
